Hi! Here I go again with my Spam addiction. I wanted to have the traditional breakfast of Spam and Eggs. So there I was preparing the Spam and the eggs, but before I got to slicing the Spam the old fashioned way, I thought of shredding it so that it will mix with the egg properly.
I originally thought of mashing it, but then I don't think it will mix well with the egg that way. So there I shredded the Spam. It looked like corned beef. Haha !
I cooked the Corned Spam until I was happy with the color and the smell..:))
I forgot to take a picture, but I also added shredded cheese to the Spam when it reached my desired color.
I added the beaten eggs an just mix. If you want to make it like an omellette then don't mix. Wait for the egg to get cooked then turn it upside down to cook the other side.
But for me I prefer soft and fluffly scrambled eggs, so yes, I mix it until the eggs were fluffy and there were no liquid.
I then tranferred it to a plate and cooked some Spam strips for the finishing touches.
